Based on the availability of ingredients, the menu varies from day to day, meaning that every plate carries a moment in nature and time. Rich wine sauces have a special place in the kitchen as the restaurant is located in a wine cellar – wine is not only an addition but the foundation of their cuisine. Gregor and his team often use freshwater fish, home-grown vegetables and local meat, giving them a new life with a soft touch of their hand.
