It could be said that the Jezeršek family shaped Klemen Maletič into the chef he is today.

Klemen is the head chef at Dvor Jezeršek, where he works alongside Anna Šušteršič, the creative director of Jezeršek Catering. Together they bring traditional Slovenian flavours to life with a modern twist. Klemen’s culinary creations captivate guests with their authentic flavours and innovative dishes, earning the admiration of Michelin’s discerning judges. Under his leadership, Dvor Jezeršek has been consistently featured in the prestigious Michelin Guide to Slovenian restaurants.

Klemen’s culinary career began with his childhood curiosity and proximity to the kitchens of the Jezeršek family. As a neighbour, he often wandered into their kitchens, which sparked his interest in cooking while he was still at primary school. After primary school, he enrolled at the Radovljica Upper Secondary School of Hospitality and Tourism, from which he successfully graduated. His practical training began at the Jezeršek House of Culinary Arts, and after graduating he joined Dvor Jezeršek as an assistant chef, quickly working his way up to head chef.

He loves vegetables

Unlike many chefs, Klemen is passionate about vegetables. He enjoys using a variety of vegeta-bles for different occasions and experimenting with countless combinations. He is particularly fascinated by aubergines, which he feels are underrepresented in our culinary options. Klemen loves to experiment with flavours and explore new combinations, and aubergines are no exception.

His culinary creativity is guided by the principle “less is more”. With just a few carefully selected ingredients, he creates dishes that are both delicious and visually stunning. Klemen focuses on the quality of each element, emphasising the purity and simplicity of flavours to create dishes that are elegant and refined.
