On the outskirts of Koper, where craftsmanship meets haute cuisine, lies Salicornia – a bright, airy space that breathes with the sea and tells the story of Istria in the language of flavor. It is led by chef Vjekoslav Hederić and sommelier Jan Sinčič, a duo who bring authenticity and dedication to local gastronomy through every dish and every glass of wine.
Despite its modest location, the restaurant carries a Michelin recognition – not for pomp, but for sincerity. Each dish reflects the sea, the wind, and the paths that lead to fishermen, winemakers, and small producers.
Salicornia lives in the rhythm of the daily catch. The menu is created anew each day – from ribbonfish, red mullet, sea bass, tiger prawns, truffles, mushrooms, and wild herbs. Flavors remain pure, textures delicate, interpretations modern yet respectful. And wine is never just an accompaniment, but a voice of tradition, carefully chosen by Sinčič from the rich treasury of local varieties.
