Designed by the world-renowned chef Ana Roš, star of Hiša Franko, JAZ is a completely different world. No pressure of form, no rules. Just rhythm – the rhythm of the day, of food, conversation, and people.
JAZ is not a temple of fine dining. It is Ana’s living room, a playful space that breathes with the moment. There is no room for rigid protocols – only for flavor, creativity, and spontaneity. Plates are made for sharing, for enjoyment, for a table that expands into friendship.
The food at JAZ reflects the world – inspired by Ana’s travels, composed from local ingredients, and seasoned with daring. The menu changes daily, depending on what Ljubljana Market offers in the morning or what arrives from the Kobarid countryside.
Here, familiar dishes appear – but not as expected. Ana’s Waldorf salad, made from Slovenian apples and Planika kefir, is not just nostalgia, but an invitation to taste again. A slice of sourdough bread from Pekarna Ana, topped with English roast beef and sunflower seeds, is not just a dish – it is a reinterpretation of an iconic memory from Hiša Franko.
And then there is the playfulness so characteristic of JAZ: pasta made from stale bread, pan-fried with red pepper, poppy seeds, and tarragon. Dishes that don’t try to be perfect – because they already are, in their honesty, humor, and courage.

Every leftover at JAZ has a purpose. If Wiener schnitzel remains, it becomes a juicy meatball. Vegetable trimmings end up in cocktails or kombucha. Fruit that didn’t make it to breakfast is baked into pies, delicious with coffee or lunch.
Even fashion follows the same philosophy: sustainable clothing by Matea Benedetti is worn by the servers, and cocktails are mixed from ingredients that would otherwise go to waste. Everything contributes to a complete experience, where every element matters – not only flavor but meaning.
The space lives with the day: breakfast is colorful and lively, lunch is relaxed and open. Evening becomes special: the lights dim, rock’n’roll sounds fill the air, cocktails arrive in elegant glasses, conversations deepen, and the night stretches on.
