Gourmet Vila Muhr in Ribčev Laz is an intimate restaurant in the heart of Bohinj, where contemporary cuisine meets the alpine landscape. The approach is built on a clear idea: to create dishes that are deeply rooted in place, yet executed with the precision and restraint of a modern kitchen.
Vila Muhr was never about extravagance, but about balance. Every dish has its purpose, every flavour its place. Nothing here is accidental, and nothing is superfluous.
The kitchen is led by chef Davor Arnautović, whose style is grounded in contemporary authored cuisine that draws from classical techniques and a deep respect for ingredients. The result is clean, elegant plates with strong, defined flavour, where seasonality and local sourcing are not a choice, but a foundation.

The rhythm of nature and a contemporary interpretation
The menu is not set in advance. It follows what nature offers at any given moment.
Sustainability here is not an addition, but a starting point. The restaurant works with local producers, follows the natural rhythm of ingredients, uses the whole harvest, reduces waste and avoids unnecessary transport. The goal is not to follow sustainability trends, but to operate in a way that makes long-term sense for the environment, the community and the guests.
The menu adapts constantly. Not by the calendar, but by nature. Spring brings wild plants and fresh herbal notes, summer lightness and clean flavours, autumn depth and fermentation, winter structure and warmth. At the centre are ingredients from the local environment: fish from Lake Bohinj, forest produce, dairy and seasonal vegetables.
The kitchen is built on classical foundations: rich sauces, reductions and carefully prepared stocks that give dishes depth and character. These are complemented by modern techniques such as slow cooking, fermentation and a play on textures, always in pursuit of balance between technique and natural flavour.
Freshwater fish, game and forest elements such as mushrooms, herbs and berries hold a special place, giving the dishes a clear sense of where they come from.
The tasting menu is the clearest expression of the whole approach. It is not about a single dish, but a sequence that builds a narrative. Each course has its function, its tempo and its place. In this apparent simplicity of exceptional ingredients, precise technique and balanced flavour, the true strength of the kitchen reveals itself.
