When creating dishes, he is guided by the idea that a plate must offer more than just a meal. What matters is a sense of wholeness, where flavour, texture and composition come together into an experience.
He places particular emphasis on seasonal ingredients and working with local producers. His approach remains contemporary, yet direct and faithful to the natural character of each ingredient.

When cooking becomes expression
At the heart of his approach is a respect for ingredients and an understanding of their origin. Slovenian freshwater fish, game, seasonal vegetables and forest ingredients such as mushrooms, herbs and berries allow him to create dishes with a clear sense of place.
The dishes are built on classical culinary foundations that provide structure and depth, while modern techniques such as slow cooking, fermentation and layering of textures allow for a more precise expression of each ingredient.
The key to his approach is precision in execution and a feel for balance. Plates are not designed as a demonstration of technique, but as a considered whole where every element has its role.
His goal is to create an experience through which the guest feels the place, the season and the moment. A dish is not built on complexity, but on clarity, where the strength of the core ingredient comes through. Butter remains one of his key ingredients, binding flavours, adding depth and rounding out the whole.
