The menu is conceived as a geographical arc, stretching from the Adriatic Sea across the Karst plateau to the forests of Styria, all connected through the estate’s wines. Seasonal ingredients from the surrounding area form the foundation, enriched by subtle Mediterranean influences, ensuring the cuisine never becomes confined to a single region. The menu changes four times a year, not as a gesture to seasonality, but because the way they work with suppliers naturally demands it. Ingredients arrive on the table only when they are truly available and at their very best.

From Field to Plate
The selection of suppliers is thoughtful and deliberate.
The poultry comes from Hudin Farm, the meat from Čas Butchery. These are not decorative details. They reflect a kitchen that builds its menus around what trusted local producers can genuinely provide. Sustainability here means working in rhythm with nature: using ingredients in their entirety, fermenting leftovers, preparing stocks from trimmings, and allowing the seasons to determine the direction.
Holding all these references together is a French culinary foundation, introduced quietly yet consistently throughout the kitchen. Every ingredient is given the space to speak for itself before becoming part of a greater whole. The result is a menu that is at once local and refined, precise yet generous, a cuisine deeply aware of where it stands and confident enough to reach beyond it.

Meet the chef
Jurij Daolio
A chef cooking from two worlds, while keeping his foundations deeply local.
Jurij Daolio grew up in the Karst region, which meant Italian cuisine was never a foreign influence to him. It was simply lunch. Pasta has been part of his everyday life since childhood and remains an essential part of him today at Doppler Estate, where pasta dishes on the menu carry a significance that goes far beyond technique. They are the most personal expression on the plate.
