A house of simple Slovenian dishes "made to perfection"

At Fink, simple Slovenian dishes are so delicious that even demanding eaters are happy to indulge in them. Quickly or in several courses.

In Irča vas, not far from Novo Mesto in Dolenjska, it seems as if the world moves a little slower. The Krka River is in no hurry to flow through these parts, and people still like to take the time to socialize over a glass of rujne. The land is fertile and friendly to the people of Dolenjska. It is precisely time and the best of the land that make Slovenian traditional dishes so delicious.

At Fink, they wake up very early to leave enough time to prepare fresh bread daily. It slowly bubbles in the pans, fresh ingredients that were only recently in the ground waiting for their place on the plate.

Damjan and Tanja Fink, from Dolenj, have furnished their Fink House in their own way. In the restaurant area, people eat more slowly, while those with less time like to stop in the bistro.

The equipment is modern and comfortable, as is the service. Guests like to sit on the terrace, and in these places they also like to visit the wine cellar. And speaking of the cellar, there are 350 labels there, a good tenth of which are also on the wine list.

A sweet and salty tandem for a complete culinary experience

While Chef Damjan excels at meat and fish flavors and meatless bites, Tanja excels at sweets. Her desserts are light and delicate, like the gentle breezes blowing over the hills of Dolenjska.

The range of flavors takes you through Irča vas and spreads across the hills of Dolenjska to other parts of Slovenia. Sometimes it goes further, across the border, but always for a reason.

The flavors are simply amazing, whether it's roast Krškopolje, stuffed pumpkin flowers with herbs and local cheese cream, or something else.
