Key information
An exciting culinary journey in majestic Brda
Gredič takes your breath away. With its prominence, a view stretching over picturesque vineyards and dishes in which gentle Mediterranean influences meet strong continental flavours.
On the outside, the romantic mansion from the 17th century is an equal match for the astonishing nature of Brda. On the inside, the castle reveals an elite boutique hotel with a first-class restaurant, and an extraordinary modern and well-stocked wine shop.
Its diverse architecture provides numerous nooks and crannies for private moments or socialising – in seven rooms, a restaurant, a gallery, a wine shop, on the terrace or by the pool. The modern interior is a shelter and inspiration for various events, from business meetings and weddings to gourmet meals.
Chef Mitja Humar reigns the restaurant. He combines the Mediterranean and continental flavours that he extracts from seasonal ingredients, preferably local ingredients from Brda. Fresh herbs from Gredič’s own fragrant herbal garden add a special touch.
Wine lovers will be impressed by a wine shop with over 400 wine labels, which include wines from the most prominent and unique winemakers in the region. Therefore, the appealing wine tasting options are almost endless.
A special experience that you must not miss is a walk through the temple of sparkling wines.
This remarkable temple is a tribute to a wide range of high-quality sparkling wines and numerous world-class winemakers from this unique wine region, where visitors may taste numerous renowned local and European sparkling wines and wines from world famous cellars in the Champagne region.

Nutritious local products inspired by the nature of Brda
Chef Mitja is committed to top cuisine that has the pleasant scent of local ingredients. His dishes reflect values, such as respect for local roots, customs and tradition.
You can choose from multiple-course menus that will take you from the forest to the vineyards of Brda, and dive into the depths of the sea in between. An explosion of flavours and sensations in the refreshing surmullet with broccoli cream, red cabbage, young beetroot and olive cream. Or a tender duck leg with pea cream and preserved cherries. Or something else that is the chef’s inspiration of the day. The choice is sure to be right in any case.
