Among all ingredients, olive oil holds a special place. Not as a regional characteristic, but as a personal constant, an ingredient that Piperović understands as a craftsman’s tool of the first order, present regardless of the season or menu.

The garden behind the castle walls, the Grajski vrt, sets the rhythm of his work more than any menu plan. What grows determines what is cooked. The season is not an inspiration, it is a rule. Alongside this, he works regularly with local producers of Slovenian meat, fish and dairy, where his interest lies in short supply chains and quality that cannot be hidden.

His favourite dish is not precisely defined. He says the best one is the dish prepared with a serious approach to food. That answer says it all: Piperović does not cook for effect, he cooks for the guest who will come back.
